Tofu Chickpea Salad

Refreshing, juicy and just the right amount of dressing for this yummy salad. I learned this recipe from my mother and I am so addicted. This salad is perfect for spring and summer parties, when you don't feel like eating a lot and you need something to munch on, this salad is for you. I make a batch of it and store it in tupperware because quite frankly I can eat this for lunch everyday!

Ingredients

  • ½ block tofu
  • ½ cup chickpeas
  • 2 handful spinach
  • 1 medium sized red onion
  • Handful of cherry tomatoes 

          Dressing

  • Lemon juice
  • Finely chopped basil and mint
  • Black salt & pepper according to your taste 
  • Olive oil

INSTRUCTIONS

  1. Boil the chickpeas for about 10-15ish mins, if you’re using canned chickpeas, you don’t have to boil them, simply rinse and dry them
  2. Remove the moisture from the tofu as much as possible and cut into longer cubes
  3. Saute the chickpeas and the tofu until golden brown. In the last 2 mins remaining, add in the spinach
  4. In a bowl, add the sliced onions, tomatoes and then add the tofu, chickpeas and spinach
  5. Add the dressing, mix it all well
  6. For the dressing, please use your intuition :)
